Nōa Poké was born from the vision of Angelos Diatsintos, who discovered poke bowls while living in Amsterdam. After living in different countries across Europe for a decade and captivated by the freshness and unique flavors of this Hawaiian dish, he decided to return to his hometown of Athens to introduce this new cuisine to Greece. With a shared passion for food and a desire to create something special that would not only delight people but also contribute to a healthier, more connected world, Angelos partnered with Delphine Sanglard to develop and grow Nōa Poké.

Delphine, a foodie and passionate traveler who has visited 25 countries, currently resides in California, where poke bowls have become a popular trend. Her love for exploring global cuisines and cultures, paired with her culinary expertise and corporate background, brought a creative and international touch to Nōa Poké. Though she lives abroad, Delphine, who is married to Angelos' brother, visits Greece multiple times a year to stay actively involved in the business.

Nōa Poké is a self-funded, family-run venture that first opened in September 2021 in Panormou, an area in Athens, as a "ghost kitchen" focused on takeout and delivery. After a few months, and due to rapid popularity, the founders decided to launch a full-service restaurant. By September 2022, Angelos and Delphine opened a second location in the lively Koukaki neighborhood, near the Acropolis.

As Nōa Poké continues to grow, Angelos and Delphine remain committed to their shared vision of bringing healthy, flavorful poke bowls to more communities. With plans for future expansion, Nōa Poké is set to become a leading name in fresh, exotic, and delicious dining, both in Greece and beyond.
